Light, spongy and tangy steamed snack from Gujarat, made with chickpea flour and tempered with mustard seeds.

🧾 Ingredients

1 cup besan
1 cup semolina
1 cup yogurt
½ cup water
1 tsp Eno / baking soda
2 tbsp sugar
1 tsp mustard seeds
1 tsp sesame seeds
2 green chillies, slit
10 curry leaves
Juice of 1 lemon
2 tbsp oil
Salt to taste
Coriander & coconut for garnish

👨‍🍳 Instructions

Mix besan, semolina, yogurt, sugar, salt and water into smooth batter. Rest 15 min.

Grease a steaming plate.

Add Eno and lemon juice, mix gently until frothy.

Pour immediately into the plate and steam 15-18 min.

Check with toothpick – clean means done.

Heat oil, add mustard seeds, sesame seeds, curry leaves, green chillies.

Add ½ cup water + 1 tbsp sugar to tempering, boil, pour over dhokla.

Garnish with coriander and coconut. Cut and serve with green chutney.
