Mumbai's iconic "Indian Burger" – a crispy spiced potato fritter inside a soft bread roll, served with fiery chutneys.

🧾 Ingredients

4 potatoes, boiled & mashed
1 tsp mustard seeds
10 curry leaves
4 green chillies, chopped
1 tsp ginger-garlic paste
½ tsp turmeric
1 cup besan
Pinch of baking soda
Oil for deep frying
6 pav buns
Green chutney
Dry garlic chutney
Salt to taste

👨‍🍳 Instructions

Heat oil, splutter mustard seeds & curry leaves. Add chillies, ginger-garlic paste, turmeric, mashed potatoes and salt. Cool, then shape into balls.

Make batter: mix besan, turmeric, baking soda, salt and water – smooth, thick consistency.

Dip potato balls in batter and deep-fry until golden and crispy.

Slice pav, spread green chutney on one side, garlic chutney on other.

Place hot vada inside pav.

Serve with fried green chilli on the side.
